almond cookie dough protein balls

one of my fav, simple and simply delicious recipes. the perfect snack. high in protein, fibre and all the good stuff.

Ingredients:

1 cup roasted almonds
1 tbsp coconut oil
1/2 cup shredded coconut
5 medjool dates, soaked in boiling water for ten mins
1/2 cup oats
2 tbsp coconut sugar
2 tbsp chia seeds
1 scoop of protein powder (I use unflavoured whey)
chop chips, as many as the heart desires (lots !)

Method:

1. chuck your almonds, coco oil and shredded coconut into a high-speed food processor & blend for 2 minutes or longer on the highest speed, until texture resembles almond butter (if it looks dry, you’ll need to process for longer until the oils are released!)
2. add the rest of the ingredients apart from the choc chips, and blend till smooth(ish)
3. (If you don’t want the choc chips to melt place the mixture in the fridge for 15 mins or so….) & then fold in chop chips
4. roll into balls
