banana choc chip muffins

ahh yes. the classic, no fail choc chip muffin. never ceases to impress. heres my healthy-ish take on the traditional choc chip muffin.

ingredients:

  • 1 banana, mashed

  • 2 eggs

  • 1/4 cup coconut oil, melted

  • splash of vanilla extract

  • 1/4 cup maple syrup

  • 2 cups almond meal

  • 3 tbsp coconut sugar

  • 1/2 cup buckwheat flour

  • 2 tsp baking powder

  • choc chips (lots)

  • handful of walnuts, crushed (optional)

method:

  1. preheat oven to 180 degrees fan forced and line muffin tins

  2. whisk all wet ingredients in a small bowl

  3. mix all dry ingredients, excluding the choc chips and walnuts, in a large bowl

  4. add wet ingredients to the dry and stir until combined

  5. add the choc chips and walnuts last and mix till even

  6. spoon into muffin tins (makes roughly 12 muffins)

  7. bake for around 20 mins or until cooked through

  8. remove from oven and attempt to let them cool before eating…
